So we started with making our drink
Fruit Medley
1 cup lemon juice
2 cups orange juice
2 cups pineapple juice
4 cups ice water
2/3 cup of sugar can add more or less according to your tastes
Mix and stir all together then allow to chill in the fridge. Yummy and Easy
We then proceded to make the
Corn Chowder
4 thin slices of bacon
1 small onion
3 cups diced potatoes
4 cups corn
6 cups hot water
4 tablespoons butter
1 1/2 cups evaporated milk
2 1/2 teaspoons salt
dash of black pepper
Coarsely chop the bacon and onion. Put into a soup pot and cook until onion is soft and bacon is cooked. Stir frequently or it will burn. Add potatoes, corn, and water. Cook until potatoes are soft. Add butter, milk, and seasonings. Reheat to boiling and serve piping hot.
Next we moved on to our BlueBerry Pie
1 can blueberry filling
2 pillsbury pie crusts
Unroll the dough placeing 1 crust in the bottom of a pie can. Pour in the blueberry pie filling. Then unroll onto a piece of wax paper the 2nd crust and cut into strips. Place 1 piece on and alternate on top and on bottom to form a lattace top. Cook at 425 for 15 minutes then lower temp to 350 for 30 minutes or until golden brown. Yummy and So very Easy
Then we took a long needed nap to recharge and bide our time until we had to start the
Stuffed Pork Loin
1 small pork loin
1 1/2 cups fresh bread crumbs
1/4 teaspoon poultry seasoning
1 1/2 teaspoon salt
1/2 cup finely diced celery
2 teaspoons melted butter
flour
milk
Lightly mix together the bread crumbs, seasonings, celery, and melted butter. Once mixed (will be dry) slice the pork loin in half but not all the way through forming a pocket then fill it up with the stuffing.Lay in a baking dish and sprinkle with flour. Pour in milk until about a 1/2" deep. Cover and bake at 325 for about 2 hours. Uncover for the last 30 minutes.
This was very very good. The only thing I would change is next time using some food safe twine to tie the loin closed. Ours opened up spilling the stuffing out.
Lastly we made our
Cheese Biscuits
1 1/2 cups flour
3 teaspoons baking powder
1/2 teaspoon salt
1/4 cup shortening (we ended up using about 1/2 cup)
1/2 cup milk
1/4 cup grated cheese mixed with 2 teapoons softened butter
Sift the flour, measure, sift again with baking podwer and salt. Do so until very very fine and well mixed. Cut in shortening until mixture has small chunks like navy bean size. Add milk all at once and stir quickly until dough stiffens. Turn out onto a floured board and knead for about 20 seconds. Roll out to 1/4" thickness and cut into 1 1/2" rounds. Make sure you cut an even number of round. Place 1/2 of the rounds on a baking sheat and cover middle with cheese mixture. Then place the other 1/2 of rounds on top forming mini sandwiches. Then take any remaing mixture and place on top of the sandwiched rounds. Bake at 450 for about 12 minutes.
Like I said earlier I opps and baked them for about 17 minutes and they did dry out but did not burn. I will try to make them again later but next time watching the time

Autumn says: Our meal was a hit. Everyone said they LOVED it. I found a tip: for the fruit juice medley you would want to refridgerate it while you make the rest of the food, or else it will be very tart.
